Raw foodies often crave cooked food in the evening. Instead of binge eating on a heavy meal at night-time, these dehydrated kebab skewers will satisfy your cravings and keep you from feeling heavy afterwards. Try changing up this raw recipe using any of your favorite veggies.
What you’ll need:
- 1 package cherry tomatoes
- 1 head bok choy
- 1 zucchini
- 1 cup mushrooms
- 1 red pepper
- 2 tbsp nama shoyu or liquid aminos
- 2 tbsp apple cider vinegar
- 3 tbsp maple syrup
- 3/4 cup olive oil
- 2/4 tsp sea salt (to taste)
- 1/2 tsp chipotle powder
What to do:
- Chop up all the veggies into bit sized pieces (don’t chop the cherry tomatoes)
- Mix the remaining ingredients in a bowl for the marinade
- Soak the veggies in the sauce overnight (or longer)
- Assemble the skewers
- Dehydrate at 100º for 3-4 hours. Until the veggies are soft.
If you don’t have a dehydrator, feel free to roast these in the oven or on the BBQ, they won’t be raw but they will still be delicious! Using a dehydrator to warm up food is an excellent way to satisfy those cravings for cooked food. Do you have a favorite recipe with your dehydrator? Share it!
