When you’re eating salads all the time, it’s easy to get caught up using the same old ingredients every time. Eventually we get bored and fall off the salad bandwagon. But it doesn’t have to be that way! Salads can be spiced up by trying new recipes often, and using new ingredients that you aren’t used to. Add some salad to your life with this hearty garden dish, packed full of all the best things for you. I normally don’t like dulse because it has a slightly fishy taste. Just don’t use too much, and it will add an appealing saltiness to the dish. It’s high in protein as well as B-vitamins (including B12) as well as sea minerals including iron and iodine. Add that to the omega-3 fatty acids you’ll get from the hemp and the countless nutrients from the greens, and this salad is nothing short of miracle food!

What you’ll need (serves 3-4):

  • 1 head of romaine lettuce
  • 1 tomato
  • 1 large avocado
  • 2 lemons (juiced)
  • 1/4 cup of hemp seeds
  • 1 big handful of parsley
  • 1 big handful of mint
  • 1/2 cup of dulse

What to do:

  • Chop or tear the lettuce into small pieces. Go ahead and sub romaine for your favorite lettuce.
  • Dice the tomato and avocado.
  • Chop the parsley and mint.
  • Mince the dulse into very small pieces.
  • Mix everything together and squeeze the lemon juice over the salad as a simple sour dressing.

Remember, even in cooler climates, you can grow parsley and mint. They are hardy plants and very nutritious. When we picked the mint for this salad, the smell infused the kitchen – what a treat! Store bought mint whether organic or not cannot replicate the freshly picked variety!
